GLUTEN-FREE BAKERY AND BISTRO OPENING IN OLD ASHBURN

The Difference Baker will offer gluten-free and allergen-free foods.

A new bakery and bistro that specializes in gluten-free goods will be opening in Old Ashburn, along Ashburn Road. It will be called The Difference Baker and feature a certified gluten-free kitchen.

Owner Alyssa Sobecki discovered she was gluten intolerant and wanted to create a safe, fun place for others to go and enjoy sweets and treats.

“We really want to focus on a place where parents can come and pick up hot food for their kids and not worry about it,” Sobecki told The Burn. “It’s going to be certified soy-free, peanut-free and gluten-free. There will be zero cross contamination. There will be air filtration. There will be an alkaline water filtration system. We’re even going to use our own washer and dryer for our linens.”

The shop will have three to four small tables, but will focus on carry-out. Menu items will include breakfast wraps, lunch wraps, sweet and savory hot pockets as well as doughnuts, cookies, muffins, breads, even pretzels. There will also a freezer where ready-to-bake meals such as pot pies and lasagnas will be offered.

The Difference Baker will be opening in a space at 20937 Ashburn Road. Besides their own bakery, Sobecki says a big part of the concept will be a shared kitchen space that other food purveyors can use to make gluten-free and allergen-free items for their own menus.

Look for The Difference Baker to open this fall.

    YAY! I am THRILLED to hear this! We have Celiac disease in my home and so greatly appreciate this concept coming here to Ashburn! Cross contamination is ALWAYS a worry in places that offer gluten free but still have gluten products on the menu…gluten is airborne and all it takes is one small slip up and we suffer! THIS is a GOD send! No guten means no worries! Thank you so very much! Can’t wait to try it out!
