New gluten-free bakery opens Friday in Ashburn

The shop will also offer gluten-free dinners to take and bake at home.

The Difference Baker — a new gluten-free, peanut-free, tree nut-free bakery — is ready to rock and roll in Ashburn. They will open their doors with a limited menu tomorrow morning, Friday, November 8.

You may remember The Burn gave you a sneak preview of the new bakery and its menu a couple of weeks ago. (See that story here.) At the time, a late November opening was announced, and indeed the official grand opening is scheduled for November 23.

But we knew they wouldn’t be able to wait to start baking.

Here’s part of the message owner Alyssa Sobecki is releasing this evening to her team:

“We aren’t ready to open, we don’t have everything made, and we have a limited menu. Do we know what we are doing? Kind of. Have our cupcake boxes been delivered? Nope! Do we know how to use our point of sale system? Nope! But we must learn some day, and that will be tomorrow.”

“Will we show up with our whole heart, and are we going to fail more times that we would like. We ask in advance to just love us, help us back up when we fall, and be patient as we all learn how to serve you better.  One thing we can promise is that you’ll love everything made in our kitchen because it was made with 100 percent love and intention to bring a little heaven on Earth for those with (and without) dietary restrictions!”

The Difference Baker will be open from 8 a.m. to 2 p.m. tomorrow at its location at 20937 Ashburn Road. The limited menu will include:

  • Lemon-Chia scones
  • Blueberry scones
  • Pumpkin scones
  • Chocolate chip cookies
  • Sugar cookies
  • Oatmeal Raisin cookies
  • Chocolate donut holes
  • Vanilla donut holes
  • Cinnamon rolls

There will also be frozen scones, cookies, tortillas and baked ziti to take and bake at home. Also look for nitro cold brew coffee.

    Will you have any products that are egg free and gluten free?
