New Cafe Rio Mexican restaurant opens Monday in Ashburn

The opening off the restaurant was delayed by the coronavirus pandemic.

Opening day for the new Cafe Rio Mexican Grill restaurant in Ashburn is finally here. Monday, June 1 is the big day as the restaurant opens for delivery and curbside carry-out service and opens its patio for guests to enjoy as well.

Cafe Rio was supposed to open back in March — right as the Covid-19 pandemic was ramping up. The night before the grand opening, the management team switched gears and decided to hold off until the situation became more clear. That time is now.

Under the new Phase One rules that went into effect in Loudoun County last Friday, Cafe Rio is able to open its patio at a 50 percent capacity so people can socially distance from one another. And the restaurant will begin offering the food to go option that many restaurants have been offering to survive this challenging business climate.

Cafe Rio is a Utah-based chain with a menu inspired by the Rio Grande region that pulls from the cuisines of northern Mexico, southern Texas and New Mexico. The new Ashburn Cafe Rio is in the Ashbrook Marketplace shopping center at the intersection of Ashburn Village Boulevard and Russell Branch Parkway.
