Dig — a new fast casual restaurant that specializes in “seasonal comfort food” — is getting closer to opening at One Loudoun in Ashburn.
The Burn first told readers about Dig last December when we reported that it was taking the 2,500 s.f. spot that used to be home to Zoe’s Kitchen.
Work has been underway in the space since at least early June and recently the signs for Dig were installed on the facade of the building.
We spoke with one of the folks in charge on site and were told that they are looking to open in early September if everything stays on track.
The brand has more than 30 locations stretching from Boston to DC, with most in the NYC area. Locally, there are outposts of Dig in Georgetown and Bethesda.
The menu at Dig changes with the seasons. Currently, they are offering items like crispy chicken sandwiches as well as crispy tofu sandwiches and a Mediterranean plate with seared wild salmon.
