Wine’ing Butcher debuts new restaurant in Old Ashburn

The local gourmet market opened in 2013.

The Wine’ing Butcher has expanded its in-store menu and is now putting an emphasis on the restaurant side of its operations. The new menu, along with new hours, started this week.

Additions include several new entrees as well as a full menu of shared plates. They’ve gotten rid of their corking fee, so customers can choose a bottle of wine in the shop and have it served at their table with crab cake poppers, bacon-wrapped asparagus, wings and more. They also carry a selection of craft beers.

The make-over into more of a restaurant has also included a redesign of the store space — and the addition of a tables and chairs to create a casual dining room.

The Wine’ing Butcher — which has three locations in New Hampshire — opened in Old Ashburn on Ashburn Road in 2013. The neighborhood market is known for the gourmet items it carries as well as its butcher shop and its carry-out menu of prepared dishes.

    Prices are too high as a salad with chicken (to go) is $18 plus tax. Please name any restaurant that charges that much to go. They are good but not worth more than $12. We stopped going when they increased prices AND we do get the LCPS discount.

      Andrew, the owner. Our LCPS discount is to honor their often devalued commitment to the community not cause we think our prices are high and they need a discount. $18 is a dinner salad! We pride ourselves on the quality of the products(it matters) we use, making everything from scratch(it matters) and the portion sizes(it matters). These same people get discouraged themselves when places they “like” close and then are stuck with the “chain” type establishments offering less quality and smaller portions at higher prices. Kind of ironic.

    About time they got rid of the corking fee. It made no sense that you had to pay a corking fee for wine bought in the shop.

    Their sandwiches are delicious and huuuge, and I think they are reasonably priced. What I don’t think is reasonable is how incredibly slow the staff is. I was there back in June on a Saturday when there were only two other customers besides me (who were also waiting on their orders). It took **20 minutes** for them to make me a sandwich.

    Maybe since then they have gotten the kinks out of their operation, now that they have switched focus to the restaurant. I’ll give them another chance, but honestly, I can’t sacrifice a third of my lunch hour just waiting for my order… I hope that things have sped up considerably since that sleepy Saturday.

    I agree. I have been there numerous times for lunch in the past and while the food is consistently good, it takes too long for them to make something simple, like a sandwich. I’ve had to remind them before at the half hour mark that all I ordered was a chicken salad wrap and then there are excuses and confusion. I finally stopped going. I will give the new restaurant once more chance and hope the speed of the service has improved.
