Reston’s new Pisco y Nazca Ceviche Gastrobar opens next week

Big news on the region’s restaurant scene. The eagerly anticipated Pisco y Nazca Ceviche Gastrobar at the Reston Town Center is getting ready for its opening day.

The big evening will come next Monday, July 24, when the restaurant opens at 5 p.m.

It was back in March 2022 when news broke that the upscale Peruvian restaurant was coming to the RTC.

It has taken over the space that was formerly Vapiano, looking out on the small park at the west end of the center.

The brand — which has two locations in the Miami area and one in DC — specializes in traditional Peruvian dishes that have been given a modern twist.

The current menu at the DC location features nine different styles of ceviche, including the Callejero made with octopus, fish, shrimp, calamari, cancha, rocoto, and crispy plantains; and the Ají Amarillo, consisting of fish, shrimp, ají amarillo leche de tigre, cancha, and choclo.

There are starters including Tostones topped with various ingredients such as pork or shrimp; and Papas a la Huancaina with Idaho potatoes, huancaina sauce, boiled egg, and botija olives that is served cold.

Entrees include Arroz con Pollo made with Peruvian style chicken and rice, huancaina sauce, and salsa criolla; and Lomo Saltado, which is a seared tenderloin, with soy and oyster sauce, onions, tomato petals, jasmine rice, and served with fries.
