Ashburn’s The Difference Baker expanding with second location

Exciting news for a homegrown local brand. Ashburn’s The Difference Baker is expanding and opening a new brick-and-mortar location in Fairfax County at George Mason University.

The Difference Baker first opened just off Ashburn Road in Old Ashburn back in 2019.

The bakery and restaurant specializes in baked items and other foods that are not just gluten-free, but also free from peanut, tree nut, soy, fish, sesame, and other allergens.

The daily line-up includes things like quesadillas, mac and cheese, and pizzas — all allergen-free. You can see their daily menu here.

The brand — which is the brainchild of area resident Alyssa Sobecki — is taking over a spot that was formerly occupied by an Einstein Bros. Bagels in Mason’s engineering building.

“We’re incredibly proud that George Mason University will be our second brick and mortar location ever, and even prouder to be the first university in the nation to bring a certified allergen-friendly bakery to campus,” The Difference Baker announced.

An exact opening date hasn’t been set yet, but they are targeting being ready sometime this fall.
